There is a point where everything has to end. But not blogging or anything that I’m fond of! Of course! Just saying that telling the stories and blogging about our great Vietnam trip has to end here. But hoping to visit again when all of our friend is up for another long and winding road trip! Sure is we all need a vacation like this one. It’s all about the bonding, relaxing, enjoying the great views of the new places and trying out a lot of things that I’ve never think I would try ever in my life. I’m such a lucky one to be travelling with my family whenever we need one. Oh! Tạm biệt means Goodbye in Vietnamese.

Welcome to Lang Biang Mountain. Yeah you can see it right above the photos is a zebra (maybe). The place is a good tourists spots indeed. It’s not just us who arrived there that late afternoon. But a lot of tourists as well riding buses and vans. Say hello to the cowboys! Yeeha!

Lang Biang mountain. The 1,900m peak is reachable by a steep paved path, ideal for a 3 hours hike, or you can ride in a jeep for 40,000d. Also visit the minorities village under the mountain foot. After the scary jeep ride going up to this mountain I can’t believe that I’m still alive. The jeeps seems to be really old already and even the drivers looks like trying to rest after the war happened in Vietnam. haha! Just kidding! But riding those jeeps and seeing those jeep drivers really look dang scary!! Seriously!

Very happy to see Mimi and my Daughter Ashlee happily playing together even though it so cold up there haha!

Hurray! For the mother and daughter tandem!! woot! woot! I Would’ve wear pink jacket as well haha!

I know I looked too cold and I admit it! It’s funny how every time I looked at Mimi and Ashlee and they don’t even seem to feel the coldness at all.

Finished the day with this lovely People living in the mountains. I admit that I never understand a thing the whole time of the show. Because no one translate it to english. Even my Vietnamese friend Anna didn’t get the message much as they were using deep Vietnamese words that maybe old people can only  understand. Though, my husband looks he had so much fun drinking this really nice Alcoholic drink that according to my husband, it taste like Sake Japanese drink. Allan and Mr. Long enjoyed traditional dancing. The whole show sounds really funny to me though, I can’t understand anything, Sure is I really enjoyed all the time We’ve been travelling in Da Lat Vietnam. Nothing beats good company, good food, and really nice place to stay with the whole time of relaxation. A good time and a lot of good memories to remember with each passing day. Till next post guys! LOVE LAKE IN DA LAT VIETNAM

After tasting the sweetest and freshest strawberries from Da lat Vietnam also known as Le Petit Paris, We then, explored the gorgeous ever Love lake. It was like a wonderland for me and for the two kids Mimi and Ashlee who enjoyed their Horse back riding around the Love Lake. They have a lot of animals, huge flowers, and dwarf statues all around the Love Lake park. In the middle of the lake as well, We had this not so familiar foods we had to grill in a small but oh! so cute Nipa hut. Haven’t tried the cycling though, But so happy that my daughter Ashlee didn’t get scared of riding the horse all around the Love Lake even though she’s not with me. I just got so scared that time coz she’s with the people who cannot understand or speak english. But glad they managed it and enjoyed the whole ride with her friend Mimi.

LE PETIT PARIS AND STRAWBERRIES

Heya guys! I’m back after so long I guess being absent in the blogging world!! Continuing my story and blogging once again about our Da lat Vietnam escapade, All the crew started the beautiful morning with some yummy breakfast! As usual I had my fried eggs veggies and Vietnamese bread. It was indeed a wonderful weather for me! Eating our breakfast just beside the lake is such a nice and fun view to eat together with your friends and family!

This was the nearest Swan ride just beside us while we were eating that time! There’s a restaurant called the Bluewater Restaurant and their food was so yummy! This lake as well is the first thing you will see if ever you’re going to visit Da lat Vietnam.

So the story goes, and yes! Da lat Vietnam is also known as The Paris of Vietnam! Obviously having this really cute tower and that round-about for cars is indeed feeling like you’re in Paris! Well, I’ve never been to Paris or any part of the nearest place I can be but Indeed this place as well is very romantic for those love birds who’s in for a honeymoon and very romantic place to explore. Seeing really nice big bunch of flowers, Cool nice breeze, Yummy foods and of course very clean place is the way to go!

So lucky to have this photo taken with our friend Allan. One of the family and our friends as well booked their hotel just right where you can see the whole Da lat Vietnam gorgeous views! The round about, The lake and The small Paris Tower is way too cool seeing just outside of their Balcony!

Love strawberries? Yeah! After the nice lovely breakfast, and good picture-taking of the views from our friends hotel balcony, Here we are picking the ever fresh and so sweet strawberries I’ve ever had! haha!

I’m not fond of strawberries or anything berries, But living in a healthy way now I have bunch of them inside our fridge! haha! Here’s my daughter so happy picking her own strawberries trying to fill in the box she’s holding on.

Mommy daughter time again! Still picking strawberries! Sorry for the so awkward picture of me holding my iPhone every time! I was trying to get some video! Because it’s gonna be so long again till we can visit this place once again.

The whole Vietnamese crew picking some strawberries as well! Not just me! haha! They’re even eating the strawberries right away after they picked them! That’s how so yummy the fresh picked fruits are!

Oh! Before we arrived to the strawberry farm, We noticed this cute little houses from far away. We thought it was the Farmers houses or something else silly but then We all figured out it was a small cemetery just right before the strawberry farm! Kinda creepy to think that I’m eating the strawberries just near from the cemetery haha! Too late to realise haha!

On our way to somewhere I don’t know what to call the place is. Allan and I was so eager to see this really big buddha we saw when we visited the Flower Park. Lucky we were on the same road going back to our hotels. We did went up to the hill to see the buddha and surprisingly we saw some tourists as well!

Mimi praying to the buddha with Ashlee looking up as well. She was supposed to follow Mimi but then maybe because she’s so shy or She didn’t get the detail of what Mimi were doing. It’s just amazing though, that the whole trip They were both happily playing doing a bit of sign luggage thing, Because Mimi cannot speak english that much yet. How wonderful kids are!

The entrance going up the hill to the big Buddha! We thought that cars aren’t allowed to go up but then we’re half way the hill already when motorbikes and tourist vans started to come down haha! Too late for us! hehe

Mimi’s father and a great Vietnamese friends of us praying to the buddha. Mr. Long is such a good father and a husband! His family is great to be with accompanying us whenever we go and visit Vietnam. His family will make sure to entertain us every time we’re there! They have great restaurant and Very nice food also! Thanks for letting us ride your car as well! Up all the way in Da lat Mountains and around Ho Chi Minch. Such a great memories to remember always. Thanks guys! God bless! xx

NIGHT MARKET & THE TEMPLES

So the story goes, After the roller coaster ride at the mountains of Vietnam and after all the breathtaking views we’ve seen around We finally decided to go to one of the temples while we still have time left before we rush back to our hotel.

Nothing so different or extravaganza happening in the temple we’ve been too. It’s still the usual temple as you can see anywhere in other countries.

You can see monks praying or eating inside. Of course you can see a lot tourists as well. I just never noticed, if it is actually allowed to come in sleeveless and in shorts though, Because usually you need to cover up yourself before entering a temple. Or maybe because I never went inside one of the temples. haha!

If you can notice the above photos on the left hand side people/tourists checking out the plants or I guess herbs that is planted all over the place that has a nameplate hanging around the plants so you’ll know what kind it is and some definitions as well. I got amazed how the other plants have this very funny structures looking thing and you really will noticed them while you passed by.

 

Of course anywhere we go, We always see this really nice big bunch of flowers! Ready to be picked and put a ribbon and ready to go for a wedding! I guess the weather really helped a lot for this plant to be able to survive their beautiful petals! Their gorgeous!!

After the Temple and a bit of a rest back to our hotel. We found ourselves wandering around night market. Which is actually a walking distance only from our hotel. But then we have our own car and very good driver Mr. Fu so why not just drive us to go there! Lucky us! haha

The place is sort of like Chatuchak market for me in Bangkok Thailand. Though, it is not like tons of stalls that you will see but enough and crazy bargaining happening around the night market!!

It is a superb night market I can say, Because the whole place is fantastic! You can even see newscasters live reporting everywhere! I should’ve try saying Hi on TV!! haha! They even have to close one of the streets as well for people who does small toy car racing!

You can even ride the bike and drive it anywhere!! Even in the middle of their main streets! I’ve been itching to try this bikes but then it is not very suitable for us because I have my 4yr.old daughter and One of my friend Nhu is pregnant as well. Anyway, We enjoyed the whole time we stayed there! A must see place to go in Vietnam.

Oh! Just wanted to share you guys my excitement over Jollibee in Vietnam!! haha! Yeah! I was excited that time It’s been a long time I guess since I visited Jollibee in Philippines. The difference was the food in Jollibee Vietnam have a lot of spicy food choices and Every serving of the foods you ordered comes with a side veggies like slice of tomato cucumber and lettuce as well. Never I have seen that in Jollibee Philippines, I guess. Though, One thing I noticed as well is their Jollibee is not as very famous as we do have it in Philippines. There’s only a few people I have seen when we tried to eat their one time. Even my Vietnamese friend never eat there! haha!

Of course wanted to share the The Pink House Hotel! Indeed it is pink right?  This is where we stayed the whole time we spent our second holiday in Vietnam. It is very cold in this place that they don’t even need to put A/C’s in every room because even when it is summer the place is still cold as! haha! Bet I should visit Baguio in Philippines very soon as well. More to come about our Vietnam Vacay! Thanks guys! God bless! xx

IT’S DONE! Finally!

Hi guys!! Talking about friday the 13th yesterday, I finally decided to at least cut my hair or may I say trimmed it. The scary part was I’m not really prepared to do this yesterday but then I found myself in a point saying to myself that, If I won’t do it today then when it is actually going to happen! So it’s like, Let’s do this husband! Yeah! It was my husband sweating yesterday trying to make my hair nice and trimmed well. He did cut my hair yesterday and he was saying that yeah! that just easy! Then he started cutting my hair and revealed to me that it was a bit hard trying to make it really straight specially everyone knows how hard to cut a super thick hair like mine. There’s a point that it was all nice and straight but then I will start changing my position and there’s a tiny bit of a hair hanging somewhere that looks my hair cut really bad, So he needed to cut it to bits until it is so looking good. Photos above are the before and after. He cut the tip of my hair like 6inches. Not bad though, I felt the sudden lightness of my head and hair after that hair cutting. Indeed a big help for me. haha! It’s my husbands first time doing this! So I guess he did really great! Well, I am thinking of learning how to cut my hair in long layers all by myself because my hair grows as fast as like that. I found myself this past few days watching this girls on youtube on how do they do their own haircuts. It looks amazing and I guess I needed that much of strength and courage to do that by myself. I know I can do that someday. I just need that good layering scissors and I can start practicing. haha!  Well if you know some easy to follow tutorials on how to cut your hair in layers by yourself, Or you know some very easy techniques, Share the love folks! DATANLA WATERFALLS VIETNAM

As I said to my last blog post I will be blogging a lot about our second holiday trip in Vietnam which is more on nature and cold weather condition. Indeed Da Lat Vietnam which is in the mountain range 9hours drive from Ho Chi Minh is totally breathtaking from the high mountains, scary zigzag road and different towns we’ve been to on the way to Da Lat. It is quite amazing how different this place is, Away from a noisy busy road full of motorbikes, Crowded people and away from the dirty air coming from the smokey vehicles.

Welcome to Datanla! Not sure if it’s the real translation though, haha!

The roller coaster ride is the first climax and heart pumping activity we’ve done that day. It is not going to move automatically  and not controlled by some one, But only you. It has a small long stick on the right hand side and three people can fit in one car, but only one people has the total control of it. Gotta be careful though, Because there are people who started the pace of the ride already and they might stop somewhere in the middle you don’t know and an accident will surely happen I guess. Our ride had gone pretty smoothly but nearly before the pit stop, One tourist guy stopped in the middle and we had to stop as well. His pointing something in the bush, But since we cannot understand Vietnamese We just waited for the guy to start the ride again going to the falls. Picture above is my daughter Ashlee waiting for the next ride. The second photo above when we stopped to take a photo with the waterfalls. Oh! We just knew that it’s actually a big snake in the bush when a guy translated it for us after we had reached the waterfalls! haha Lucky I really didn’t see it haha!

Yeah! a Family photo atlas! Backview is the Datanla Waterfalls. Thanks to our friend Allan who almost took our family photo all the time were in Vietnam. That’s the first waterfalls! Isn’t it gorgeous! I know but sad to say that it is not allowed to even swim to any falls that you can see because of the strong water current and big rocks everywhere!

Another huge waterfall! I took this photo just using my iPhone so sorry if a bit blurry this one. It’s actually my husband there standing hehe camera-shy! You have to ride the cable car first and then ride the excalator (Picture above) going down to this waterfall can you actually believe that? Very modern and tourists friendly You think? Specially to the old people who still wants to go mountains like this. Right? They didn’t have to walk that much and just enjoy the rides and the view of course!

Our very dearest couple friends Anna Nhu and Allan who’s going to have their first baby very soon! We are all excited! See guys very soon again!

Peace sign from Mr. Fu! Our very good driver who drove us and keep us very safe through a long and winding road activity for the past 3days we stayed in Da Lat Vietnam! Thanks to you guys! We surely miss you all and hope to seeing you again very soon with your bouncing baby boy Allan and Nhu! I miss the cold weather and flowers there! WELCOME TO THE FLOWER PARK!

Hence, The title of this post is all about the photos my husband took last time we had our second part holiday in Da Lat Vietnam. Da Lat Vietnam is the capital of Lam Dong Province in Vietnam. Da Lat is also known as an area for scientific research in the fields of biotechnology and nuclear physics. (Source from wikipedia), I didn’t expect to be that cold in Da Lat. I have brought all my sleeveless and leggings for this holiday for not so over luggage weighing if I do some shopping around. I’m almost freeze to death! Well just kidding. But for a person like me who’s not used to cold weather should really feel so cold walking around the place specially at night.

Welcome to Flower Park as the title goes, Our first stop is the Flower Park! I can’t say that this should be the only place in Da lat Vietnam that should be called as Flower park. I guess the whole Da lat should be the flower park. Since from the first step in that place and whenever place you go and look even hotels and sidewalks has the flowers galore! It’s insane flowers everywhere! It’s like living with Cinderella and Snow white in a story haha! It’s a dream for me! It’s fantastic how the whole place is full of flowers everywhere!

This waving puppy dog is the first thing who will greet to you from looking outside of the park! It’s like inviting you to come and play with the flowers around! Too cute! They have goose/swan as well!

Of course a princess horse carriage! It’s all pink and perfect! Now where’s the princess? I guess somewhere hiding big bunches of flowers… Can you find the princess’??

A wonderful feeling walking around these gorgeous big bunches of flowers! They’re all so pretty and I just wanted to stay in that place and put a house maybe somewhere haha!

 

There are animals around as well! We actually have photos of Snow white and the seven dwarfs but too shy to put them in here because my daughter and I looks crazy in that photo haha! So yeah! There’s really a princess around hehe.

 

Forgive me for posting this but my daughter and I were just in the right moment of posing with the same pouty lips haha! I just love this shot! I know you guys are waiting for my husband’s photo but he  was the Photographer that day so spot him somewhere or in my next blog post. VIETNAM BARGAINS!

Whenever My family and I go visit other country, One couldn’t resist doing a lot of bargaining around town and buy things for our loved ones/friends and relatives back here in Singapore. But last time We went to Vietnam I tried my best to only just buy something for my friends and family and something that I really needed rather than my wants. I’m not so sure if I’m really successful doing that until this time but who knows! I’m still a girl! Who’s wants and needs is very hard to think and compare! haha! Anyway, Here are some of the things we bought in Vietnam last time we went there to visit our very good friends Allan and Ann Nhu who’s going to have their first baby very soon! Everyone’s so excited!

These are strawberry candies, tamarinds, Vietnamese coffee, ginseng and tea’s We bought back in Da lat Vietnam where we had our kinda like second holiday because the weather there is so cold like Baguio in Philippines I guess, Compare to a hot weather in Ho Chi Minh. Coffee and ginseng are for my husband and Dad back in Philippines. Tea is for me since I love drinking tea! This tea we got have this very yummy and a bit fruity taste compare to a regular tea. I like it! The strawberry candies and tamarinds I gave to my friends already here in Singapore.

These are the Vietnamese Coffee filter my husband bought for himself since He bought a pack of Vietnamese coffee as well.  Vietnamese like having their Coffee with ice. But my husband always love his coffee so hot rather than Vietnamese ice coffee.

Don’t you love these colourful bags? One for my daughter and one for me as well! Thanks to our Vietnamese friends who’s very kind buying stuff for my daughter Ashlee haha! I love how colourful these bags perfect for spring and summer! haha! Will definitely buy some more when I get back in Vietnam!

Earmuffs and Scarf since it’s very cold in Da lat Vietnam at night when we walk around the night market. Bought the pinky crochet lollipop as well for my daughter’s dolly Ashley haha!

This doll looks so gorgeous! Been walking around the place in Vietnam and been seeing this doll everywhere! I know my daughter likes it but I’m trying my best not to buy since its big and won’t be able to fit inside our luggage because you cannot press it. Down below part of the doll is made with styrofoam so its impossible to fit in anywhere. Ended up that I bought it as well and My daughter dragged it in the airport until we landed in Singapore haha!

Since we won’t be able to bring some fresh strawberries we picked by ourselves back in Da lat Vietnam, We have this big strawberry pillow instead haha! Cute right?

Of course! Whenever we go to other country, We surely buy some pasalubong t-shirts for our friends!! I bought 10 pieces of this. Just sad that they don’t have this in singlets because I don’t usually wear clothes with sleeves.

Bought these 10 pieces of jade bracelets as well for my friends! I love how it has dangling buddha’s it’s cute that I couldn’t resist buying them! Supposed to just buy shirts from Vietnam! But oh! well! that’s for everyone’s good luck!

STEAMED STUFFED BITTERMELON

For the past couple of days, My loving husband’s been cooking this so yummy bitter melon or bitter gourd recipe that I have never seen anywhere in the Philippines. Hence, The title “Steamed Stuffed Bittermelon”. First time I saw it in the internet, I have been thinking so hard that most Filipinos loved eating Bittermelon or bitter gourd sautéed together with egg or As I can almost see it is when I usually eat Pakbet or Pinakbet in Philippines. So here’s the recipe on how you going to cook this yummy, nice and presentable bittergourd dish for your family and friends.

Ingredients:

  • 1/2 cup ground lean pork
  • 1 teaspoon finely minced fresh ginger or 1 teaspoon grated fresh ginger
  • 2 tablespoons minced spring onion (the white and the light green parts only)
  • 2 tablespoons rice wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon light soy sauce
  • 1 large egg , lightly beaten
  • 1 teaspoon corn flour
  • 2 medium bitter melon
  • If desired you can add 4 peeled water chestnuts

For the sauce:

  • 2 tablespoons peanut oil
  • 2 teaspoons minced garlic
  • 1 tablespoon rice wine
  • 3/4 cup chicken broth (or chick stock cube in water)
  • A pinch of salt
  • 1 teaspoon corn flour
  • 1 tablespoon cold chicken broth
  • 1 tablespoon sesame oil
  • If desired: 2 teaspoons chinese black beans (salted)

 

Preparation of the Bitter Melon:

1.  Trim the ends off the bitter melons and slice into about 2.5cm to 3cm slices.

2.  Using a small paring knife carefully cut out the pulp and seeds in the center of each slice of bitter melon, leaving only the melon wall.

3.  Rub the inside of each slice with coating of cornflour.

 

Directions:

  1. Combine all of the stuffing ingredients in a large bowl and mix them thoroughly.  

2.  Rub more starch into the inner surface of each slice of bitter melon, then stuff the cavity of each slice with a generous spoonful of stuffing, enough to completely fill the cavity.

3.  As the slices are stuffed, arrange them on a plate and set the plate in a steamer with water coming within an inch of the plate.

4.  Cover and steam for 20 to 25 minutes.
5.  Arrange the cooked slices on a serving plate.

It’s actually your decision if how many minutes do you want your dish to be steamed. Some others want well done and some want the vegetable crunchy. This is not only very yummy but very nice and presentable as well. It’s a good idea to serve this when you have a visitor or a special occasion!

Fo the remaining mix minced pork ingredients I did wrapped them and deep fried, like spring rolls. Or if you have any idea on how to use the remaining pork then it’s all up to you guys! But if you can use it all up then you did a great job haha!

Sauce:

  1. In a separate wok or pan, heat 2 tablespoons of oil, add the garlic and black beans (if desired) and then stir fry for a minute or two.
  2. Add the Shaoxing wine/Rice Wine, chicken stock and salt.
  3. Bring the mixture to a boil.
  4. Thicken with the dissolved cornflour and flavor with the sesame oil.
  5. Pour the sauce over the bitter melon and serve with white rice.

The version of the sauce that my husband did, Didn’t have black beans because he said that it’s salty and I don’t want to add more saltiness since the dish itself is bitter already that I’m scared the black beans will give the stronger taste which I don’t like. So it’s just up to you guys.

My husband had his Bittermelon like this after we finished cooking it.

My daughter and I had our bittergourd like this. I added a little more fun look on how am I going to serve it to my daughter. So this one looks like a really huge crown on top of a mountain haha! Or maybe a king’s dish haha!

  • I am the eldest of the three sisters in my family.  Yes we are tres’ Maria’s Sister’s back in Philippines.
  • I love and enjoy watching Zombie or horror movies, Even though, I screamed to death while I’m watching them.

  • I have a Restless Leg Syndrome. I can only feel this Before I go to bed and when I’m  thinking I guess. But not that so serious. Haha!
  • I love eating and should I say I only eat dark chocolates.
  • My mom is bisaya and my dad is ilocano, But I cannot speak any of their dialects and I don’t know any simple words as well.  I was born in Calamba, Laguna which speaks tagalog.
  • You can never see me wearing shorts or mini skirts walking outside of our house with bare legs, I have a huge dark brown birthmark both of the back of my legs.
